Hydrolysable or condensed, the function of the tannins proposed by Demptos varies according to their nature :reinforce wine oxidation, help to stabilise the colour, colloidal substance or profile for a better balance.

Yeast derivatives

Yeast derivatives act according to their nature on the wine’s structure and evolution. The polysaccharide fraction of certain types of derivatives acts on the colloidal structure of the wines to improve their stability and taste properties, while the nitrogen/sulphur fraction of other derivatives, which act like competing antioxidants, limits the evolution of the wines and protects their most sensitive components: aromas and colour.

Which oenological tannins hould I use to reinforce the structure of a red wine?

Thanks to its active white grape pipprocyanidols, Profil’Seed®Polymer reinforces the structure and body of red wines that are lacking in structure. It also has antioxidant properties and helps stabilise the colour of the wine.

In what form are the tannins and yeast derivatives delivered? Can they be stored without deteriorating?

The tannins are delivered in 500-gram vacuum-sealed aluminium food grade bags, while the yeasts come in 250-gram bags. Tannins and yeasts should be stored in their original packaging and kept away from sources of heat and humidity.
